Flatbread ‘Pizza’ for fall

Soooo, this recipes name (Flatbread Pizza) is a bit of a misnomer all around.

The flatbread pizza dish is neither flatbread, pizza, or particularly crafted for fall… but it can be adjusted. Follow me on this one.

If you are feeling like you might need a healthy reset as we approach the Christmas season, you aren’t alone. Big foodie holidays like Thanksgiving in November, and Hannukah hanging out in December with Christmas right before we slide into the New Year, might have you rethinking your cheesiest of cravings (laugh out loud).

If that’s you, stick around for a bit and try out this flatbread pizza recipe!

Take a pita, white, whole grain, spinach, your pick. Toast it with either olive oil or butter (or margarine if you prefer) on both sides (that is important!) Next lay it flat on a serving plate, don’t let it cool. Take two tablespoons of cream cheese and spread it on the warm flatbread pita until it melts and covers the whole base.

Now, we get to the toppings. (Which is the best part, am I right?)

On top of the melted cream cheese, I like to add a variety of fruits and vegetables. Cherry tomatoes, cucumbers, arugula, peaches, spinach, etc. I drizzle over the top with about a tablespoon of honey, and voila!

Now of course you are able to customize this flatbread pizza with fall veggies like pumpkin, corn, squash, and other things you’ve harvested from your garden, this is just my take! I’m sure this pizza will be delicious no matter what you choose!

Some possible swaps you can do are balsamic vinaigrette instead of honey, and adding peppers in addition to what I’ve listed. Also, feel free to add in your favorite seasonings!

Ingredients:

Flatbread of your choice

Butter or oil for toasting

2 tablespoons of cream cheese

Assorted veggies

Assorted fruits

Drizzle of honey or maple syrup
